Quick Blackened Tilapia Sandwiches with Zesty Slaw

Ingredients

  • Tilapia fillets 2 count
  • Olive oil 1 tbsp
  • Hamburger buns 2 count
  • Mayonnaise 2 tbsp
  • Blackening seasoning 1.5 tbsp
  • Green cabbage 2 cups
  • Carrot 1 medium
  • Lime 1 count
  • Cilantro 2 tbsp
  • Honey or maple syrup 1 tsp
  • Salt to taste
  • Black pepper to taste

How to Cook

  1. In a medium bowl, combine shredded green cabbage and shredded carrot.
  2. In a small bowl, whisk together the juice from the lime, chopped cilantro, mayonnaise, honey (or maple syrup), salt, and pepper until well combined.
  3. Pour the dressing over the cabbage and carrots. Toss well to coat. Set aside to let flavors meld.
  4. Pat tilapia fillets dry with paper towels. Sprinkle generously on both sides with blackening seasoning.
  5. Heat olive oil in a large non-stick skillet over medium-high heat until shimmering.
  6. Carefully place seasoned tilapia fillets in the hot skillet. Cook for 3-4 minutes per side, until fish is opaque and flakes easily with a fork, and has a dark, crusty exterior.
  7. While fish cooks, lightly toast the hamburger buns in a separate dry skillet or toaster.
  8. Spread a thin layer of mayonnaise on the toasted buns. Place a cooked tilapia fillet on the bottom bun, top with a generous spoonful of the zesty slaw, and cover with the top bun. Serve immediately.
