Ingredients
- Tilapia fillets 2 count
- Olive oil 1 tbsp
- Hamburger buns 2 count
- Mayonnaise 2 tbsp
- Blackening seasoning 1.5 tbsp
- Green cabbage 2 cups
- Carrot 1 medium
- Lime 1 count
- Cilantro 2 tbsp
- Honey or maple syrup 1 tsp
- Salt to taste
- Black pepper to taste
How to Cook
- In a medium bowl, combine shredded green cabbage and shredded carrot.
- In a small bowl, whisk together the juice from the lime, chopped cilantro, mayonnaise, honey (or maple syrup), salt, and pepper until well combined.
- Pour the dressing over the cabbage and carrots. Toss well to coat. Set aside to let flavors meld.
- Pat tilapia fillets dry with paper towels. Sprinkle generously on both sides with blackening seasoning.
- Heat olive oil in a large non-stick skillet over medium-high heat until shimmering.
- Carefully place seasoned tilapia fillets in the hot skillet. Cook for 3-4 minutes per side, until fish is opaque and flakes easily with a fork, and has a dark, crusty exterior.
- While fish cooks, lightly toast the hamburger buns in a separate dry skillet or toaster.
- Spread a thin layer of mayonnaise on the toasted buns. Place a cooked tilapia fillet on the bottom bun, top with a generous spoonful of the zesty slaw, and cover with the top bun. Serve immediately.
