Quick Spaghetti with Simple Tomato Sauce

Ingredients
- Spaghetti 180 grams
- Canned diced tomatoes 400 grams
- Garlic 2 cloves
- Olive oil 2 tablespoons
- Fresh basil 1/4 cup
- Salt to taste
- Black pepper to taste
- Parmesan cheese (optional) 2 tablespoons
How to Cook
- Bring a large pot of salted water to a rolling boil for the spaghetti. While the water heats, mince the garlic and roughly chop the fresh basil.
- Heat olive oil in a medium skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn it.
- Pour in the canned diced tomatoes (undrained) into the skillet. Season with salt and pepper to taste. Bring to a gentle simmer, then reduce heat to low and let it cook while the pasta cooks.
- Add the spaghetti to the boiling water and cook according to package directions until al dente, usually 8-10 minutes. Reserve about 1/2 cup of pasta water before draining.
- Drain the spaghetti and add it directly to the skillet with the tomato sauce. Add half of the chopped fresh basil and toss to combine. If the sauce seems too thick, add a splash of the reserved pasta water until it reaches your desired consistency.
- Serve immediately, garnished with the remaining fresh basil and a sprinkle of Parmesan cheese, if desired.
